Grilled Chicken and Avocado Salad with Quinoa

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 1 cup quinoa, uncooked

  • 1 large avocado, diced

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup feta cheese, crumbled (optional)

  • Fresh cilantro or parsley for garnish

For the Chicken Marinade:

  • 2 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

For the Dressing:

  • 3 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

Instructions:

  1. Marinate the Chicken:

    • In a bowl, mix the olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper to create the marinade.

    • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Let it marinate in the refrigerator for at least 30 minutes.

  2. Cook the Quinoa:

    • Rinse the quinoa under cold water.

    • In a saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce the heat, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed. Fluff with a fork.

  3. Grill the Chicken:

    • Preheat a grill or grill pan over medium-high heat.

    • Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.

  4. Assemble the Salad:

    • In a large bowl, combine the cooked quinoa, diced avocado, cherry tomatoes, cucumber, and red onion.

    • Slice the grilled chicken into strips and add to the salad.

  5. Make the Dressing:

    • In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.

  6. Serve:

    • Drizzle the dressing over the salad and toss gently to combine.

    • Sprinkle crumbled feta cheese on top if desired.

    • Garnish with fresh cilantro or parsley.
